During poultry processing in the United States, it's common for chicken carcasses to be washed with pathogen-reduction solutions such as chlorine dioxide, peracetic acid, or other approved antimicrobial rinses. These treatments are designed to reduce harmful bacteria like Salmonella and Campylobacter before the chicken reaches consumers.
The European Union takes a different approach. Rather than relying on antimicrobial rinses at the end of processing, EU regulations emphasize preventing contamination throughout the entire production chain—from farming practices to slaughter and packaging. Because of this policy difference, poultry treated with these rinses has generally not been permitted for sale in the EU since 1997.
Both the U.S. Food and Drug Administration (FDA) and the U.S. Department of Agriculture (USDA) maintain that approved antimicrobial rinses are safe when used according to regulations and that residue levels on finished poultry remain well below established safety limits. The debate is therefore less about whether the rinses are toxic and more about two different philosophies for achieving food safety.
