Before a maraschino cherry ever lands on your ice cream, factories basically strip away everything that made it a cherry in the first place.
The freshly harvested cherries are dumped into giant vats filled with sulfur dioxide and calcium chloride brine. That chemical bath preserves them for months, but it also bleaches out all of their natural red color. What’s left is a yellowish-white, flavorless, firm little ball made mostly of cellulose.
Then the sulfur compounds are washed out, and the cherries are soaked in heavy sugar syrup with almond extract and synthetic petroleum-derived dyes like Red 40 or Red 3. That is how they get that perfectly bright, almost glowing red color.
Here are the actual numbers:
• Bleaching brine: 2,000–6,000 ppm sulfur dioxide
• After washing: Residual sulfur reduced below 100 ppm before dyeing
• Common synthetic dye: FD&C Red No. 40—a petroleum-derived synthetic dye
And yes, the FDA allows these petroleum-derived dyes to be used in decorative fruit. European regulators, however, enforce strict daily intake limits and require warnings on certain synthetic color additives.
Now I can’t help but wonder: What could the effects of consuming all these dyes and processing chemicals be on our health over time?
So the next time you pick up a jar of maraschino cherries, turn it around and read the ingredients. Look for “sulfiting agents” or “FD&C Red No. 40.”
Because apparently, even a cherry can’t just be a cherry anymore.
